I would like to thanks jay of tasty appetite blog to share her recipe of Almond Carrot kheer.When i saw this recipe on her blog with the picture on it i immediately bookmarked it and then tried this at home and believe me it came out beautifully first time itself.All the credit goes to jay for introducing this kheer to her blog.thanks jay.i hv done addition to it i hv added few strands of saffron to it n believe me the taste was super.
INGREDIENTS:
1.Almond:(Soaked and made into paste):15 to 18
2.carrots: (grated and made into fine paste):2
3.Milk:2 cups
4.Sugar:put according to ur taste
5.Ghee:1 tsp
6.cashew :5 to 6
7.cardamon powder:a pinch
8.raisins:6
9.kesar:few strands
METHOD:
1.Soak the badam overnight or in hot water for 2 to 3 hrs
2.peel off the skin of the almonds.
3.grate the carrots to fine pieces.
4.now grind almonds and carrot in a blender to fine paste.
5.Take a pan add this almond carrot paste ,milk,sugar and cardamon powder.
6.when it starts boiling switch off the gas.
7.now heat a tsp of ghee and roast grated cashew and raisins to golden.
8.add this to kheer.
9.also add few saffrons (kesar )to kheer.
10.allow to cool and serve chill n enjoy.
